El Rosticero Express opened along TX-119 to bring something Gillett didn't have: real, slow-roasted rotisserie chicken and street-style Mexican food made from scratch, every single day. What started as a roadside stand has become a stop that oilfield workers, ranch hands, and families plan their meals around — because the chicken is always moist, the birria tacos are always fresh, and the portions never leave you hungry.
We fire up the rosticero before sunrise so breakfast is ready early and lunch never runs out. Our tamarindo half chicken, hand-folded tacos with grilled onions and jalapeños, and Mexican burgers are all made in small batches using traditional recipes passed down through the family — no shortcuts, no frozen sides, just honest cooking.
